Homemade Ginger Lemon Soda Pop
Ingredients:
300 grams ginger, peeled and grated
3 pcs. large lemons, peeled and juiced
50 grams Peotraco Sugarlyte
100 grams Peotraco Muscovado
600 ml. water
Soda water, chilled
Ice
Mint leaves and slices of lemon for garnish
Procedure:
1. Put grated ginger in a saucepan and set over low heat with the lemon peel, lemon juice, Peotraco Sugarlyte, Peotraco Muscovado, and 600 ml. water. Stir until the sugars have completely dissolved.
2. Increase the heat to medium, then simmer for 20 to 25 minutes or until reduced and thickened. Remove from heat and allow to cool completely.
3. Strain the concentrate into a clean pitcher. At this stage, you can transfer the syrup to a small sterilized bottle and keep in the fridge for up to three weeks.
4. Pour half of the ginger concentrate into a tall glass. Fill with ice and top up with the chilled soda water. Serve garnished with a few mint sprigs and lemon slices. Enjoy!
